The Sant’Elena estate has a surface of approximately 40 hectares in a single plot. The vines are gently maintained under the Guyot method, which results in an average density between 5000-6000 plants per hectare. Experienced workers vigilantly trim the vineyards by hand, and the estate employs the green harvesting techniques to increase the concentration of grapes, creating a richer and longer-lived product.
The harvest is exclusively made by hand every August and September, only using grapes from own property. The dedication to quality and care is emphasized as experienced workers carefully select only the healthiest plants, which leads to very low yields and an average production of one bottle per plant.
