Paul Fürst’s estate, Weingut Rudolf Fürst, is on the western border of Franconia (Franken), where the vineyards have 220 million year old desert red sandstone soils, as opposed to the chalky / lime soils of most of Franconia. Around 40% of his vineyards are planted with Spätburgunder (Pinot Noir), also with Riesling and Weissburgunder (Pinot Blanc) and other varieties. Altogether he has 20 hectares of vines, with 11 hectares of the Centgrafenberg vineyard the biggest block and the other amazing vineyards such as Hundsrück, Schlossberg, Klingenberg (dated back to 17th Century!) and Karthäuser.
